اثر سطوح روغن ماهی بر عملکرد، خصوصیات لاشه و ترکیب اسیدهای چرب گوشت در گوساله‌های نر پرواری تغذیه‌شده با جیره‌های حاوی مقادیر مختلف یونجة خشک

چکیده

به منظور بررسی اثر افزودن سطوح مختلف روغن ماهی و علوفة یونجه و ذرت سیلوشده بر عملکرد پروار و ترکیب و کیفیت لاشه و پروفایل اسیدهای چرب لاشة 36 گوسالة نر هلشتاین با میانگین وزن اولیة 61± 345 کیلوگرم در قالب طرح کاملاً تصادفی و به روش فاکتوریل 3×2 (0، 1 و 1/2 درصد روغن ماهی و دو سطح 10 و 20 درصد یونجة خشک) 90 روز مورد مطالعه قرار گرفت. نتایج نشان داد بین تیمارها تفاوت معناداری از لحاظ افزایش وزن روزانه، مصرف مادة خشک و ضریب تبدیل غذایی وجود نداشت. سطح بالای روغن ماهی، صرف نظر از نسبت یونجه در جیره باعث کاهش مصرف خوراک شد (01/0P<). سطح بالای یونجة خشک باعث کاهش مصرف مادة خشک شد(01/0P<). مکمل‌کردن روغن ماهی اکسیداسیون گوشت را دو ماه پس از کشتار به طور معناداری افزایش داد (01/0P<). افزودن روغن ماهی به جیره موجب افزایش معناداری در مقدار نسبی اسیدهای چرب دکوزاهگزائنوئیک و ایکوزاپنتانوئیک چربی عضلة چشمی (01/0P< ) و افزایش غلظت اسیدهای چرب n-3 (01/0P<) و در پی آن کاهش معنادار نسبت اسیدهای چرب n-6 به n-3 شد (01/0P< ). نتایج مطالعة حاضر نشان داد که با به‌کارگرفتن راهکارهایی جهت جلوگیری از اکسیداسیون گوشت پس از کشتار، روغن ماهی می‌تواند برای افزایش اسیدهای چرب سلامتی‌بخش در محصولات دامی استفاده شود. همچنین باتوجه به کاهش مصرف خوراک در نتیجة مکمل‌سازی روغن ماهی، جیره‌های بر پایة ذرت سیلوشده در مقایسه با یونجة خشک بهتر می‌توانند از آثار کاهندگی مکمل‌های چربی بر مصرف خوراک جلوگیری کنند.

Abstract
In this study 36 Holstein bulls (initial BW of 345±61 kg) were randomly assigned to 6 dietary treatments, following a 3×2 factorial arrangement, with 3 concentrate level of fish oil (0, 1 and 2.1% of DM) and 2 levels of alfalfa hay versus corn silage (10 and 20 % of alfalfa hay forage) to investigate the effects of fish oil supplementation and ratio of alfalfa hay and corn silage in diet on performance, carcass characteristics and fatty acids profile. There was no difference in average daily gain, dry matter intake and feed conversion ratio among dietary treatments. The highest level of fish oil had a negative effect on dry matter intake (P<0.01) regardless of alfalfa hay level. In addition, high portion of alfalfa hay forage in diet affected DMI detrimentally, regardless of fish oil levels (P<0.01). Fish oil supplementation increased TBARS value at 2 months of storage (P<0.01). Moreover dietary inclusion of fish oil increased the concentration of Eicosapentaenoic and docosahexaenoic (P<0.01) fatty acids (P<0.01) which subsequently reduced n-6: n-3 (P<0.01). The results of this study indicate that fish oil can be supplemented to feedlot diet to enrich ruminant products by introducing some peroxides production inhibitors in storage period. Furthermore, alfalfa hay can be replaced by corn silage to mitigate the detrimental effect of supplemented fat on dry matter intake.
